Oh, yes, more baking has occurred chez Studio Marlowe:
Gingersnaps and chocolate shortbread “stars”, both delicious (naturally).
First up, the gingersnaps:
This recipe called for 3 heaping tablespoons of (dry) ginger and the result is an amazingly sharp, strong, ginger flavor. I love ginger so the intense tasting experience is a major plus.
Tempering that intensity are the much milder shortbread cookies:
These cookies are amazingly rich, and the dollop of chocolate in the center certainly doesn’t hurt (chocolate improves pretty much anything, in my opinion). I wasn’t able to find a tip that would create true “stars” as pictured in Vegan Cookies Invade Your Cookie Jar, but I think my take on things is still quite attractive. The dough for this recipe can be quite stiff to pipe out of the pastry bag, make sure your margarine/shortening/butter is well softened before you start piping!
