These are both recipes from Vegan Cookies Invade Your Cookie Jar, by Isa Chandra Moskowitz and Terry Hope Romero. I love this book, in addition to delicious and expected cookie recipes (i.e., chocolate chip) there are a load of more unusual and original flavors and ingredients that pop up. Last night I was playing with the more quirky side of the book. First up are the Cranberry Walnut Thumbprints:
The cookies themselves have a hint of maple flavor and a nice crunch of walnuts, and the spoonful of jam in the center adds a nice touch of tart. I did not actually have any cranberry jam or sauce handy, so instead I used a cup of homemade plum jam gifted to me by a friend.
The second cookies are a more unusual combination, tahini and lime:
I upped the lime content on these by including the juice of one lime as well as the tablespoon of zest the recipe calls for. The citrusy lime flavor mixes well with the nutty sesame base flavor. I’ve made these cookies a couple of times before and they’re always a big hit at parties or in the office.
